Egg Salad Sandwiches Watercress Tea Recipe

Yield: 16 Tea Sandwiches
Ingredients:
- 4 eggs
- 4 c. Herb butter soft, prepared with herbs like chives, parsley and mint, or plain melted butter
- 4 c. Mayonnaise or mayonnaise alternative
- Sea salt, fresh black pepper and paprika (smoked paprika, preferably), to taste
- 8 slices of white bread
- Half cup chopped fresh watercress
- (Optional) chopped fresh parsley, to taste
Preparation:
- Hard-boiled eggs, rinse with cold water when finished.
- While eggs are still warm, peel and mash with the butter and with a potato masher or a fork.
- Add the mayonnaise and spices into the egg mixture.
- Spread egg salad on two slices of bread.
- Add the watercress (and possibly parsley).
- At the top of the watercress with the remaining two slices of bread.
- Remove the crusts and cut the sandwiches diagonally twice to four tea sandwiches each to make great sandwich.
