Egg Salad Sandwiches Watercress Tea Recipe

Preparation time: 20 minutes

Total time: 20 minutes

Yield: 16 Tea Sandwiches

Ingredients:

  • 4 eggs
  • 4 c. Herb butter soft, prepared with herbs like chives, parsley and mint, or plain melted butter
  • 4 c. Mayonnaise or mayonnaise alternative
  • Sea salt, fresh black pepper and paprika (smoked paprika, preferably), to taste
  • 8 slices of white bread
  • Half cup chopped fresh watercress
  • (Optional) chopped fresh parsley, to taste

Preparation:

  1. Hard-boiled eggs, rinse with cold water when finished.
  2. While eggs are still warm, peel and mash with the butter and with a potato masher or a fork.
  3. Add the mayonnaise and spices into the egg mixture.
  4. Spread egg salad on two slices of bread.
  5. Add the watercress (and possibly parsley).
  6. At the top of the watercress with the remaining two slices of bread.
  7. Remove the crusts and cut the sandwiches diagonally twice to four tea sandwiches each to make great sandwich.
